Easy chili recipe: Step by step

This Go-to super easy bison chilli recipe uses ground bison and other ingredients you probably already have in the pantry.
Today the weather is a chill -2°F. On a day like today there is nothing quite as satisfying as a steamy bowl of chilli. It's filling and full of flavor. With bison ground meat and packed full of veggies it’s really a healthy protein rich meal. For this chilli, I choose to use ground bison, which is a great lean and flavorful meat option. You could also use ground elk meat. Either way, you'll enjoy warming up with it this winter...
Ingredients
2 lbs. ground bison or elk meat
1-2 cups onion diced
2 stalks celery diced
½ cup green pepper diced
1 cup of frozen or canned corn
1 diced garlic clove
1 package chilli seasoning mix or:
- 1 tsp oregano
- 1 tsp pepper
- 1 tsp cumin
- 2 tsp chilli powder (or to taste)
- 1 tsp cayenne pepper (or to taste)
- salt and pepper to taste
(Experiment with the seasonings making it spicier or sweeter depending on your family's tastes. This chilli recipe gets even better if you let it sit overnight.)
1 tbs white vinegar
1 tsp sugar
1 28 oz. can tomato sauce
1 28 oz can diced tomatoes
1 can kidney beans
1 can pinto bean
Cooking Directions
Brown the bison ground meat or the elk ground in a hot skillet until brown and crumbly. You will see that unlike beef, you will not need to drain bison and elk meat. These meats are super lean so there will be almost no shrinkage.
Add the diced vegetables (onions, celery, green pepper, garlic), the Diced tomatoes and tomato sauce, the beans. Then add the seasonings.
Cook over medium to medium high heat until bubbly then turn down the heat and simmer for at least one hour. Stir occasionally.
Serve with crusty bread.
The flavour will improve if you leave it overnight.
This is a great dish to make in a slow cooker. Just leave it cooking all day and come home to a delicious aroma and a hearty meal guaranteed to make you feel all warm and happy.
