When we cut steaks and roasts from the bison tenderloins, we always have pieces left over that are too small to sell as steaks. These pieces are like very small filet mignons - super tender and delicious. They are great in stroganoff or just sauted with butter and garlic. Each order is 2 lbs of tips.
